Salad "Nezhinsky" is one of the most popular types of home preservation of cucumbers for the winter. Such a salad is prepared with the addition of onions, parsley, finely chopped garlic and spices, making it very aromatic and tasty. You won't need much time to prepare it, the salad is not boiled, the chopped fresh vegetables are laid out in jars immediately, and then sterilized. As a result, you get a delicious homemade snack that you can even put on the festive table without hesitation.
Cucumber salad "Nezhinsky" for the winter
Ingredients
- Cucumbers - 1 kg
- Onions - 125 g
- Parsley - 50 g
- Garlic - 3-4 cloves
- Vegetable oil - 125 ml
- Vinegar - 60 ml (9%)
- Salt - 15 g
Preparation
- If you decide to prepare the "Nezhinsky" salad, soak the cucumbers in ice water for 8-10 hours (it is best to do this overnight) so that they remain crispy and dense during the canning process. After that, wash them, cut off the ponytails, cut lengthwise and cut into small halves of circles (if you have small cucumbers, you can cut them into circles).
- Place the sliced cucumbers in a deep bowl or bowl. Try to choose dishes of a large size, so that later it would be convenient to mix salad in it.
- Peel and wash the onions, and then cut them in any way convenient for you - half rings, rings or feathers.
- Add the chopped onion to the cucumber bowl.
- Rinse the parsley under water and shake it off, then finely chop it.
- Then add it to cucumbers and onions.
- Peel the garlic cloves, wash and chop (garlic can be squeezed through a press, but finely chopped pieces give the salad more flavor). Add it to a bowl with herbs and vegetables.
- Pour vegetable oil into a small saucepan or ladle, boil it for 2 - 3 minutes, then pour the overcooked oil into the salad, add salt and 9% vinegar. Mix all the ingredients thoroughly (best done with your hands) several times. Taste it, salt if necessary.
- Wash cans for preservation with soda, rinse with cold water and boil over steam, then spread the salad in them, evenly distributing the juice formed over the cans. Try to pack the vegetables tightly, from time to time pressing them down with a spoon, and filling the jars to the top, since during the sterilization process the vegetables in the jar will sit down and it may be only half full.
- Cover the jars with Nezhinsky salad with iron lids, place them in a saucepan (cover the bottom with a kitchen towel and pour warm water) so that they do not touch each other. Place the pot on the stove and sterilize the curls from the moment they boil for 15 to 20 minutes. Thanks to sterilization, the cucumbers in the salad are crispy and juicy, and the salad itself can be stored for a long time. In addition, the use of such a preservation method as sterilization is a 100% guarantee that your workpieces will not deteriorate and the lids will not be torn off.
- After the allotted time, carefully using a tack, remove the cans from the hot water, roll them up, turn them over and wrap them until they cool completely.
- Then put the salad "Nezhinsky" from cucumbers for storage in a cellar or basement (the storage period of conservation is up to three years). Such a delicious canned salad in winter is a great addition to main courses and meat. Enjoy your meal!
